But equally impressive are traditional dishes like the Chaudrée Saintongeaise (fish stew) or Basque hors d'oeuvres served with pinchos (toasts with varied toppings). Desserts leave nothing to be desired, with mouthwatering macarons and nutty Basque cakes drizzled in chocolate produced here to centuries-old recipes. Invented in the First World War, Le Beret Basque is a mousse cake with a biscuit crust glazed with chocolate that is produced by the Miremont Patisserie to this day.
